Definition
The building blocks of protein. There are 20 amino acids; 9 are essential (must come from food). Complete proteins (meat, eggs, soy) contain all 9; incomplete proteins lack one or more.
아미노산(Amino Acid)이란?
아미노산은 단백질의 기본 구성 단위인 유기 화합물입니다. 각 아미노산은 아미노기, 카르복실기, 수소 원자, 그리고 해당 아미노산의 고유한 화학적 특성을 결정하는 가변 곁사슬(R기)이 결합된 중심 탄소 원자로 이루어져 있습니다. 단백질은 아미노산이 펩타이드 결합으로 연결되어 폴리펩타이드라는 긴 사슬을 형성할 때 만들어집니다.
인체는 단백질을 합성하는 데 20종의 표준 아미노산을 사용합니다. 이는 체내 합성 가능 여부에 따라 세 가지 범주로 나뉩니다.
아미노산의 분류
- 필수 아미노산(9종): 체내에서 합성할 수 없어 식품으로 섭취해야 함 — 히스티딘, 이소류신, 류신, 라이신, 메티오닌, 페닐알라닌, 트레오닌, 트립토판, 발린
- 비필수 아미노산(11종): 정상적인 상태에서 체내에서 충분히 합성 가능 — 알라닌, 아르지닌, 아스파라진, 아스파르트산, 시스테인, 글루탐산, 글루타민, 글리신, 프롤린, 세린, 타이로신
- 조건부 필수 아미노산: 건강한 상태에서는 비필수이지만, 질병·급성장·생리적 스트레스 시 필수화되는 아미노산(예: 아르지닌, 글루타민)
기능 및 식이 관련성
단백질 합성 외에도 개별 아미노산은 특수한 역할을 담당합니다.
- 류신: mTOR 경로를 통해 근육 단백질 합성의 핵심 활성화 인자
- 트립토판: 세로토닌과 멜라토닌의 전구체
- 페닐알라닌과 타이로신: 도파민, 에피네프린, 갑상선 호르몬의 전구체
- 글리신: 콜라겐과 항산화 물질 글루타티온의 구성 성분
완전 단백질 또는 다양한 식물성 단백질 조합을 섭취하면 모든 필수 아미노산을 충분히 공급받을 수 있습니다. 식물성 식이를 따르는 사람은 곡물에 부족한 라이신과 콩류에 부족한 메티오닌에 주의를 기울여야 합니다.
