혈당지수(Glycemic Index)란 무엇인가요?
혈당지수(Glycemic Index, GI)는 탄수화물 함유 식품이 기준 식품 — 순수 포도당 또는 흰빵 — 과 비교하여 얼마나 빨리 혈당 수치를 높이는지에 따라 식품을 0에서 100까지의 수치로 순위를 매기는 척도입니다. 식품은 다음과 같이 분류됩니다.
- 낮은 GI: 55 이하 (예: 렌틸콩 ~32, 스틸컷 오트밀 ~55)
- 중간 GI: 56~69 (예: 흰쌀밥 ~64, 파인애플 ~66)
- 높은 GI: 70 이상 (예: 흰빵 ~75, 즉석 오트밀 ~79)
1981년 토론토 대학의 데이비드 젠킨스(David Jenkins) 박사가 개발한 GI는 원래 당뇨병 환자의 혈당을 관리하는 도구로 설계되었습니다.

GI만으로는 일반적인 1회 제공량에 포함된 탄수화물의 양을 고려하지 않습니다. 혈당부하(Glycemic Load, GL)는 GI에 1회 제공량당 탄수화물 그램수를 곱한 후 100으로 나누어 이를 보정합니다. 식품은 1회 제공량이 적다면 GI가 높아도 GL이 낮을 수 있습니다 — 수박은 GI가 약 76이지만, 주로 수분으로 구성되어 있어 표준 1회 제공량의 GL은 약 8에 불과합니다.
GL 10 미만은 낮음, 11~19는 중간, 20 이상은 높음으로 간주됩니다.
실제 적용과 한계
GI 값은 숙도, 조리 방법, 식품 가공, 지방·단백질·식이섬유의 존재 — 위 배출과 포도당 흡수를 모두 지연시키는 요소 — 에 의해 영향을 받습니다. 혼합 식사를 먹을 경우 GI의 관련성은 더욱 줄어듭니다. 한계에도 불구하고 낮은 GI의 탄수화물 급원을 선택하는 것은 역학 연구에서 혈당 조절 개선, 배고픔 감소, 제2형 당뇨병 위험 저하와 관련이 있습니다. GI는 식품 선택의 유일한 기준이 아닌 여러 도구 중 하나로 활용할 때 가장 유용합니다.
