대사(Metabolism)란 무엇인가요?
대사(Metabolism)는 생명을 유지하기 위해 살아 있는 유기체에서 일어나는 모든 화학 반응의 집합을 말합니다. 영양학에서 대사는 대체로 신체가 식품을 에너지와 구성 물질로 변환하는 방식을 설명합니다. 두 가지 상호 보완적 과정을 아우릅니다. 이화작용(catabolism) — 에너지를 방출하기 위한 분자 분해 — 과 동화작용(anabolism) — 성장과 수복을 위해 단순 분자로부터 복잡한 분자를 합성하는 것입니다.
세포 에너지의 주요 통화는 아데노신 삼인산(ATP)입니다. 해당작용(glycolysis), 구연산 회로(citric acid cycle), 산화적 인산화(oxidative phosphorylation)와 같은 대사 경로는 탄수화물, 지방, 단백질을 ATP로 전환합니다.
총 에너지 소비량의 구성 요소
하루 총 에너지 소비량(TDEE)에는 세 가지 주요 구성 요소가 있습니다.
- 기초대사율(Basal Metabolic Rate, BMR): 호흡, 순환, 세포 수복 등 생명 유지 기능을 위해 완전한 휴식 상태에서 사용되는 에너지입니다. 대부분의 좌식 생활 성인의 TDEE 중 60~75%를 차지합니다.
- 식품의 열 효과(Thermic Effect of Food, TEF): 영양소를 소화, 흡수, 처리하는 에너지 비용입니다. TDEE의 약 10%입니다. 단백질의 TEF가 가장 높고(20~30%), 다음으로 탄수화물(5~10%), 지방(0~3%) 순입니다.
- 신체 활동 에너지 소비량(Physical Activity Energy Expenditure, PAEE): 공식 운동과 비운동성 활동 열 발생(NEAT)을 포함한 모든 움직임에서 소비되는 에너지입니다. 가장 가변적인 구성 요소로, 좌식 생활자의 15%에서 매우 활동적인 사람의 50% 이상까지 다양합니다.
대사율에 영향을 미치는 요인
제지방 근육량이 안정 시 대사율의 가장 큰 결정 인자입니다 — 근육 1 kg은 안정 시 하루 약 13 kcal를 소모하는 반면 지방 1 kg은 약 4.5 kcal입니다. 나이 관련 근육 손실(근감소증, sarcopenia)은 30세 이후 10년마다 BMR을 약 1~2% 줄입니다. 갑상선 호르몬은 기초 대사의 주요 조절자로, 갑상선 기능 저하증은 BMR을 30~40% 낮출 수 있습니다. 수면 부족, 심한 열량 제한, 특정 약물도 대사율에 영향을 미칩니다.
