무기질(Mineral)이란?
무기질은 지구에서 유래한 무기 원소로, 체내에서 생성할 수 없습니다. 식물은 토양과 물에서 무기질을 흡수하며, 인간과 동물은 식물이나 다른 동물을 먹음으로써 무기질을 섭취합니다. 비타민과 달리, 무기질은 가열하거나 공기에 노출되어도 화학 구조가 유지되므로 식품 가공 및 조리 중에도 비교적 안정적입니다.
영양 과학에서는 식이 무기질을 체내 필요량에 따라 두 가지 범주로 나눕니다.
- 다량 무기질(주요 무기질): 하루 100 mg 이상 필요. 칼슘, 인, 마그네슘, 나트륨, 칼륨, 염소, 황이 포함됩니다.
- 미량 무기질(미량 원소): 하루 100 mg 미만 필요. 철, 아연, 셀레늄, 요오드, 구리, 망간, 크롬, 불소, 몰리브덴 등이 포함됩니다.
체내 주요 역할
무기질은 체내 전반에 걸쳐 구조적, 조절적, 촉매적 기능을 담당합니다.
- 구조적: 칼슘과 인이 뼈와 치아의 무기질 기질을 형성합니다.
- 전해질 균형: 나트륨, 칼륨, 염소가 체액 분포와 신경 전달을 조절합니다.
- 효소 보조 인자: 아연, 구리, 망간, 셀레늄이 대사, 항산화 방어, DNA 복구에 관여하는 수백 가지 효소를 활성화합니다.
- 산소 운반: 철이 적혈구에서 산소를 운반하는 헤모글로빈의 중심 원자입니다.
- 호르몬 합성: 요오드는 갑상선 호르몬 생산에 필수적이며, 크롬은 인슐린 신호 전달을 지원합니다.
생체이용률 고려 사항
실제로 체내에서 흡수·이용되는 무기질의 비율은 크게 다릅니다. 생체이용률에 영향을 미치는 요인으로는 무기질의 화학적 형태, 증진 인자(비타민 C는 철 흡수를 증가시킴), 억제 인자(통곡물의 피트산은 아연 및 철 흡수를 감소시킬 수 있음)가 있습니다. 무기질 간 경쟁도 중요합니다 — 칼슘과 같은 특정 무기질을 매우 많이 섭취하면 철이나 아연 같은 다른 무기질의 흡수가 저해될 수 있습니다. 다양한 완전 식품 식이를 섭취하면 일반적으로 이러한 상호작용을 최소화하는 비율로 무기질이 공급됩니다.
