A type of fat with no double bonds in its fatty acid chains. Found mainly in animal products and tropical oils. Excessive intake is associated with higher LDL cholesterol. FDA DV is 20g/day.
포화 지방(Saturated Fat)이란?
포화 지방은 지방산 사슬의 탄소 원자 사이에 이중 결합이 없는 식이 지방으로, 탄소 사슬이 수소 원자로 완전히 "포화"되어 있습니다. 이러한 구조적 특성 때문에 포화 지방은 상온에서 고체 상태를 유지합니다. 대표적인 예로 버터, 라드, 코코넛오일, 적색육과 전지방 유제품에 함유된 지방이 있습니다.
포화 지방산은 단쇄(C4–C6)에서 초장쇄(C20+)까지 사슬 길이가 다양합니다. 식이에서 가장 흔한 포화 지방산은 팔미트산(C16:0)과 스테아르산(C18:0)입니다.
건강 고려 사항
특히 팔미트산과 미리스트산이 많은 포화 지방을 과다 섭취하면 LDL(저밀도 지단백) 콜레스테롤 수치가 높아지는 것과 관련이 있으며, 이는 동맥경화와 심혈관 질환의 알려진 위험 인자입니다. 그러나 그 관계는 생각보다 복잡합니다.
- 다크 초콜릿과 쇠고기에 함유된 스테아르산은 LDL을 높이지 않으며, 체내에서 올레산으로 전환됩니다
- 식품 기질(예: 전지방 유제품 대 가공육)이 전반적인 건강 효과에 영향을 미칩니다
- 포화 지방을 정제 탄수화물로 대체해도 심혈관 결과가 개선되지 않으나, 불포화 지방으로 대체하면 개선됩니다
권장 제한량 및 식품 공급원
주요 보건 기관들은 포화 지방을 하루 총 칼로리의 10% 미만으로 제한할 것을 권고합니다. 2,000 kcal 식이 기준으로 하루 약 22 g 이하에 해당합니다. 미국 심장 협회(AHA)는 심혈관 위험을 관리하는 사람에게 6% 미만(약 13 g/일)이라는 더 엄격한 기준을 권장합니다.
