티아민(Thiamine), 즉 비타민 B1은 탄수화물 및 분지 사슬 아미노산 대사에서 필수 조효소로 기능하는 수용성 B 비타민입니다. 20세기 초 도정된(흰) 쌀을 주식으로 하는 집단에서 광범위하게 나타났던 각기병(Beriberi)과의 관련성 속에서 발견된 최초의 B 비타민입니다.
